Lemon Pepper - NOT

I bought some lemon pepper seasoning, and sauteed some cut up chicken breasts.
I proceeded to season with the lemon pepper seasoning, while adding a little
sour cream and heavy cream to make delightful light sauce, threw in a handful
of shredded cheese, and all looked great.

Until I tried it.  Little did I know that the first ingredient in Lemon Pepper
seasoning is SALT!  Arrgh!  It was WAY WAY too salty.  

Although I had to throw most of it away, this was a neat trick to keep portion
control down.

I pitched the rest of the lemon pepper seasoning, will probably try to make my
own next time.  Just wanted to share this lesson with ya'll.

That's a bummer.  The lemon pepper that I have contains no salt.  /shrug

I have yet to see a "lemon pepper" that contains any lemon flavoring.
Every one I've ever seen contains citric acid instead and doesn't taste
a bit like lemon except for being sour.  They taste more like they
have that sour-straw candy powder in them.

there is a spice company in Seattle that blends a Lemon Pepper for me --
made from Lemon and Pepper (omits the garlic) -- wonderful stuff

Try to find the brand of Spices called The Spice Hunter - no salt at all.

I use it in place of salt and it is great.  On baked chicken it is quite
good.  The lemon pepper with no salt is terrible!

EVERY lemon pepper I've seen has sugar, molasses or some such in it.
I'm trying to cut out all of the hidden sugars.

Something that I've thought of:

Make your own blend!

* dried lemon peel
* cracked three peppers (white, pink, black)
* other herbs

Put it all in another spice jar and use that.

For my marinade for chicken and fish, I just use lemon juice, butter
and cracked pepper.

It really depends on the brand you buy. I have one that has very very
little salt in it and a large amount of lemon peel. It has an amazing
lemon flavor and I can use a lot of it without overpowering the food
with salt. It's from 'Zadies' and I think it is a local midwest brand.

So keep looking, you can find one without a ton of salt. While you're
looking at labels check them for sugar, some add that too.

Or, if you feel ambitious, surf the web for recipies and make them to
taste without the salt and sugar.

I have your solution.  Penzey's has a number of salt-free seasonings.
Unfortunately, I can't pull them up on the search engine.  You can find
them by looking at the Gift Boxes section.

If this doesn't work, go to the search engine, and type in Florida Seasoned
Pepper.
