Bananas stored in fridge

I just finished a little experiment on storing bananas in the fridge.

We usually buy bananas twice a week.  My better half eats one with
lunch and one as a snack every day.   I allow myself 1/3 of a banana
per day.   But things happen and we often throw one or two bananas
away because they get overripe and mushy taste foul after 3 days even
if bought green.

So I stuck one in the fridge (40degrees) just before it was about to
reach perfection and left it for  8 days.  It was delicious.   My only
complaint was that it was cold and the peel was a little dark.  

After all these years, I learned something new.  Go figure.

Bananas also freeze really well (but you should peel them first; it's
difficult to get the peel off when they're frozen).  Freezing does change
the texture, so they're not good for eating straight up anymore.  They're
great for smoothies or for baking banana breads or muffins though.

Sorry for going on about bananas and smoothies and banana breads and
muffins - I actually thought I was posting to rec.food.cooking, not
asdlc.  I should pay more attention!

(nowhere near as sweet) and add some sweetener. So I checked the
nutritional profile. Plantains have much more carb than bananas!

Way more than potatoes.

<sigh> oh, well. A few drops of extract still works. <sigh>

They're starchier, huh?  Man, I love plaintains.  I haven't thought
about that in a while.  Fried plantains ... drool .... gggghhhhghghg

I routinely store my bananas in the fridge, too.  I always heard you're not
supposed to, but I think that's just because of the peel-darkening effect.

On a side note, a while back I had some really ripe bananas which I wanted
to mash and freeze, but I didn't have time and they were about to go
critical, so I threw them in the freezer whole, peel on (and not even in a
bag!).  I intended to do something with them in a couple of days, but it
turned out to be a couple of weeks.

Once I figured out how to peel them frozen (slit the peel lengthwise in
several places with a sharp knife), I threw one in the food processor with
some cream, milk, vanilla, and a little Splenda and processed until it was
smooth.  Best banana ice cream I ever had.
