I might. I don't know.
It's really weird - the trouble is knowing which foods trigger
reactions in me, and which don't.
At this juncture I'm not full blown Atkins low-carb, or at least
Atkins Induction low-carb. I freely eat green veggies, although I
don't eat carrots. Tomato juice is a blood sugar rescue food for me,
it raises my blood sugar but doesn't drop me or give me a headache.
Since I get grossed out by the idea of eating lots of meat fat, I am
trying to get the oils and fats from veggie sources.
Potatoes (which I generally only ate fried - the oil might have
"slowed them down") have never triggered me immediately the way pasta
does, although now I just treat taters as one more carb food and in
GENERAL find I get fewer of the bad headaches and fewer bad reactions.
I substitute roasted veggies and mushrooms for the potatoes.
And different things will trigger me at different times. In my
experience, a few bites of cake after dinner, no problem. A few bites
after lunch - headache city. Mind you I've cut out the sweets in
general, but I really don't get it.
Today I had a reactive crash after a lunch of lettuce tacos (meat and
cheese and guacamole wrapped in lettuce instead of corn tortillas).
Same lunch yesterday, *no problem*. Days ago, *no problem*.
The problem is, I just never know what is going to trigger a reaction
in me, or when. The reactions to milk have been isolated - but I could
have that reaction to almost anything at any time.
I get headaches from all artificial sweeteners. I will never put any of
that junk in my body again.
