help with potluck ideas

I have a potluck at work tomorrow and need an easy idea for something tasty
and low carb to take.

I am thinking maybe some kind of sf jello product or something but it needs
to be more than just a bowl of jello.

Can anyone help me out here with something quick and easy to take to a
potluck?

I've had a lot of luck with either deviled eggs or curried chicken
salad. Just make sure to label the curried chicken, because it looks a
lot like potato salad, and there's usually two or three bowls of that
already at most potlucks.

(One of my in-laws always brings this insanely delicious broccoli
salad to potucks and I keep meaning to get the recipe for it -- it has
sunflower seeds and raisins and crumbled bacon in a slightly sweet,
creamy dressing. I'd imagine it would be easy to convert to low-carb
by leaving out the raisins and sweetening the dressing with Splenda.

Dawn,

Here you go:

4 C raw broccoli (cut small)
8 slices bacon, cooked and crumbled
1/4-1/2 C raisins
1 C mayo
1/4 C sugar
1/2 C sunflower seeds

mix it all together.  I've also seen this with grapes instead of
raisins, and toasted almonds instead of sunflower seeds.

It would be pretty easy to substitute Splenda for the sugar.  I am not
sure what to do for the raisins.  Aren't dried apricots relatively low
on the g.i. scale?  And then maybe instead of grapes, you could put in
chopped apples.  Also lower g.i.

I use broccoli, bacon and grated cheddar cheese...........and sometimes toss
in cauliflower as well. It is delicious and a standard for us at the
cottage.

Salad of mixed baby greens with bacon, avocado, blue

Sausage and cheese platter with some good quality crackers for those not on
low carb.  Local deli can probably prepare a nice one saving you the effort.

Here's something easy, pretty, low carb, and yummy...

Take slices of boiled ham, spread with a layer of softened cream cheese, put
a blade of green onion on one end of the slice of ham, roll it up like a
pinwheel, then cut into slices (bite-sized).  People really seem to like
these.
