sausage is a pretty broad category. what style of sausage are you talking
about? breakfast links? patty? italian? chorizo? kielbasa? andoule?
personally, i use Jennie-O turkey italian sausage a lot, and various brands
of turkey kielbasa. that's just my preference, i think most sausage in the
US are 0-2 carbs, depending on if they use sugar in the processing.

I make my own. There has been some great recipes on here. No crap in it,
if you make it yourself. I know, you are saying, who has time to make their
own sausage? It is so easy! Buy ground pork, add spices make patties,
individually wrap them, and throw them in the freezer. I have been doing
this for quite some time and to be honest it is way cheaper and the sausage
is much better. It is fun to. The only thing I do more than above is grind
it myself, because it is even cheaper yet. I buy a pork butt for something
like .89 or .79 a pound. Now that is cheap sausage that is much better than
anything you can buy.

Because I don't eat pork, I use chicken sausage. I frequently buy the
sausage prepared fresh at the meat counter at my supermarket, so that
wouldn't help you. For breakfast sausage, the Trader Joe's in my area
carries Empire Chicken breakfast sausages - I cannot recommend these highly
enough. They are fabulous.

I don't eat pork as well and almost all beef sausage has pork casing so
untill recently i was out of luck. At my local health food store they have
the free range turkey sausage frozen free of nitrates and sugar. Also the
lil man in the ( helath food store) deli makes ground turkey sausage he
sells it like ground meat you make your own patties. Some butcher shops
will make sausage for you if your order is big enough minus all the bad
stuff.

Making sausage is actually very easy. There are some conditions you
need to observe, but that's no different than any kind of prep work
and cooking.

We mostly use a local brand here Bob Evans (ohio) but I also go to a
reliable grocery and get their bulk breakfast sausage, just like ground
round, easier than pushing that tube mess out of the plastic wrap.
Try 1 lb breakfast sausage, fried and drained of grease
8 eggs, scrambled
choice of chopped green peppers, grated zucc. or any vegs, mushrooms, etc
splash of half n half or cream
Place the mixture into a 9x12 greased casserole dish, bake 30 mins @ 350
Great to cut up and have ready for a quick breakfast all week. I divide it
into 6 servings, we often use a TBS. of Salsa to top it for a change.
