Just wondering, are you making it with artificial sweetener? I saw that
recipe and was thinking at some point trying it, but I don't do fake sugar.
I love pound cake and it sound good with almond flour.

I don't do fake sugar either. Obviously, the cake I make isn't sweet,
but it tastes good enough for the spousal unit to scarf it down.
There is one version on the net that includes cream cheese - that
would probably make it much moister.

Thnaks for the recipe..I made it last night and mmmmm
I varied to suit my tastes... I used liquid splenda for sugar.
I ground my own almonds so the texture wasn't as smooth as flour, I used
1 cup of the ground up almonds, 1/2 cup of ground flax seeds and 1/2 c
coconut. I used 1 T of almond and 1 T of vanilla extract. Oh it feels
so good to bake again, I stopped becasue the bulk splenda adds so many
carbs, now I can have my cake and eat it too ;) and it was plenty sweet.
Next time I might add a bit of cream cheese and maybe some walnuts.
Just can't overdo or make it too often cause its things like this that
are my downfall. Linda
