Thanks for asking!

I decided to make a layer salad.

It had one head of lettuce, green onions, 10 oz box of frozen peas, 1.5 cups
mayo mixed with a little bit of cream to make it smoother & spread easier, 2
T. splenda, can (& a half) of real bacon bits, and a package of shredded
cheddar cheese.

I didn't bother trying to add up all the carbs since a serving wouldn't
really have that many total.

I figure a few for the lettice, maybe some for the onions (didn't use much,
though), some for the peas, small amt for the splenda & some minor ones for
the cheese as well.

It tured out very good & there wasn't any left over for me to have on my
break!

I may have to make it again sometime and actually try and figure out the
actual carb count for the whole dish.  I had some chicken at the potluck but
peeled off the crispy crust (it was somewhat over cooked anyhow) and some
lunch meat which someone had brought to make sandwiches (which I think no
one bothered to do).  I also had a small spoonful of an
orange-jello-tapioca-cool whip dessert one of my coworkers made and about a
bite sized piece of a cheesecake someone else had made.  Since I hadn't
eaten anything else before I went to work, I don't think the carbs I ate add
up to the 35 daily I am allowed to have this week.
