Cauloflower potato salad

Has anyone tried this? Is it worth making? I need something new and
different to go with ribs tonight. Potato salad and beans were two standard
sides for this dinner. Any suggestions. Cole slaw is one, but I've been
eating a lot of that lately. TIA

I made the one from Atkins.com and I LOVED it, tho it wasn't a mustard-ey
potato salad like I normally go for. I think you could tinker with it a
hundred ways (and I welcome any feedback if you do :-))

I made some awhile back and it was pretty good. Give it a try
sometime.

How would you make fauxtato salad? I thought cauliflower fauxtatoes were
just mash.

I love potato salad - and I'm always asked to make one for family gatherings
too.

Would be nice to be able to enjoy it without overdoing the carbs.

Chunk the cauliflower into the size you'd use in potato salad, steam
w/garlic.  Put result in bowl with paper towels to absorb moisture in
bottom (quite a few).  Put bowl in fridge overnight to chill properly
(also helps 'refirm' chunks that are a tad over-steamed).  Use as you
would chunked potato.

You can also chop cauliflower in the food processor to the size of rice.  Makes
a nice rice substitute.

Yvonne, do you chop the cauliflower before or after you cook it?  If you
chop it raw, can you then boil or steam it to serve like rice?

I'm not Yvonne, but I can play her on usenet :).  I would chop it raw,
and then cook it --kind of hard to 'rice' cooked cauliflower unless
it's very lightly steamed-- it won't hold it's shape very well and
you'd likely end up with mashed-- at least I would.

Fauxtato Salad
1 head of fresh cauliflower. (Frozen won¹t work.)
4 hard boiled eggs peeled and chopped
1/4 cup of Mayonnaise
1 tsp Mustard
1 tbsp chopped celery
1 dill pickle
1 packet Splenda.

Mince the pickle. Add Splenda.(This is your ³sweet relish.) Set aside.

Cook a cauliflower al dente.  If you cook it too much it will fall apart.
Cool and divide into flowerets or chop.

In a large bowl, lightly mix cauliflower flowerets, chopped eggs,
mayonnaise, mustard, celery and ³sweet relish².  Add salt and pepper to
taste.  You may want to adjust the mayo, mustard or add other ingredients
you normally add to potato salad, like crumbled bacon. Chill until served.

Atkins.com has the recipe that I used. (I know it sounds like I work for
them but honestly they just have LOADS of good recipes :-)). I didn't wait
overnight to let mine firm btw, but you should definitely chill for a half
hour when it's all made.

I make it alot during the summer months.  I love macaroni and potato
salad and while my family munching on those I always have some of my
faux potato salad on hand and don't even miss the other.
You make it the same way you make potato salad.  Don't cook the
cauliflower as much as you do for the mashed.  Cook it so its tender but
not enough so that when you mix it with the mayo it smooches all up.
Sorry I never timed it. Personally even if you do cook it too much its
still good you can't rui n it  lol.  I drain the cauli then chop up and
add other ingredients. I don't like big bits of onion  so I just use a
bit of onion powder, black pepper, some green pepper if I have some, a
little bit of chopped up tomato just for the color and hard boiled eggs
with lots of mayo......delicious.  Maybe I'll make some today :)

Here's my recipe and I think it is much better than real potatoes:

MOCK POTATO SALAD

1 whole cauliflower, separated and cooked
2 c. celery
1 c. red onion
1 cucumber, seeded
4 hard cooked eggs
2 c. mayonnaise
2 T. yellow mustard to taste
1/4 c.cider vinegar
2 tsp. salt
2 pkgs. Sweet and Lo
1/2 tsp. pepper

Chop up all ingredients and mix and refrigerate.

We tried it with diced turnips and it worked out quite well (for me,
anyway). My wife's old family recipe involves some powdered mustard and
radishes, which might make a difference. Be careful not to overcook the
turnips as they seem to soften up more than potatoes used to do.
