Cabbage Soup

Does anyone have any GOOD recipes for Cabbage Soup?  It's cheap right now
(cabbage), and I'd like to make some.

Cabbage IS low-carb, right?

SO put a pork roast, shredded cabbage, carrots, and onions
in the crockpot this morning.  Seasoned with salt and pepper
only.  We just took it out and it was fabulous!  He also
makes what we called boiled dinner - cabbage, onions,
carrots, and smoked sausage.  The cabbage makes a great
tasting broth.  We used to put potatos in it BA.

Yep, they are - 1 medium carrot has 5 carbs, according to
Atkins.  But SO only adds 2-3 chopped up carrots for the
whole batch and I have only a couple piees at a time.  They
do add a wonderful flavor to the whole thing.

They are not as high as potatoes and have lots of good vitamins.  Just eat
them in moderation.  I just cooked a corned beef yesterday with cabbage,
carrots and potatoes for my SO.  I limit myself to one carrot, about 7 grams
carb less 2 fiber for 5 net.

It reminds me of a old dish my Mom used to make, I always loved it.
Corned beef and cabbage. She used to always add alot of potatoes.. So
no longer can add that. It should still taste good. All these recipes
you all shared, I copied and pasted. Going to put them on index cards
and add to my recipe box. Yummy.  I love messing around making soups.
There are so many different ways.  The cabbage does add a great flavor
to soups, the broth is good.  I make cabbage rolls, except I usually
use canned tomatoes with garlic, parsly..whatever seasonings come to
mind when cooking..  and then pour it over the cabbage rolls while
they cook. I no longer add the rice either. Its similair to stuffed
green peppers.  I havn't made them since low carbing, because not sure
on the canned tomatoes? Would they be a problem, like the carb count?

I have made my stuffed peppers substituting cauliflower for the rice.  This
is my favorite recipe for them:

Mexican Hamburger-Stuffed Green Peppers

4 large green peppers
1 lb. hamburger
1/3 c. chopped onion
1/3 c. chopped celery
3 c. cooked rice for LC substitute cauliflower that has been cooked and cut
up
1 c. salsa
2 t. chopped green chilies
2 c. shredded Monterey jack & cheddar cheese mix
1/4 c. salsa

Cut tops off peppers & remove seeds. Put in boiling water & boil 6 min.
Remove & set aside. Combine hamburger, onion, & celery & cook until done.
Drain off grease. Stir in rice, 1-c. salsa & chilies.
Fill peppers with hamburger mixture. Arrange in pan. Top with cheese &
salsa. Put a little water in pan. Cover tightly. Bake at 350? for 45 - 55
min.

Four servings, each at 606 cal., fat 42 g, carb 21-6fiber=net15, protein
36g.  Calculations from Fitday, may vary according to brand of salsa.

Thanks for sharing it! The salsa sounds great too.  I picked some up
at the store, said its also made with artichokes? Should work.

Yes, and it makes excellent soup.  Here is one I created, there are no
amounts to the ingredients, I just eyeball them.  For LC go easy on the
carrots and onions, heavy on the cabbage.  The mushrooms I use are dried
Shiitakes that come in a big jar from Costco, soak them for a while before
you start.  The whole thing takes about a half hour of simmering.  It's a
very interesting combination of flavors.  I use Minor's soup bases, they are
the best I have ever tried, available at www.soupbase.com

Chicken Cabbage Soup

Chicken breasts cut up
Carrots
Celery
Onions
Garlic
Chicken soup base
Cabbage
Shiitake mushrooms
Fresh ginger slices
Caraway seeds (a few)
Dash of hot pepper flakes

Here's my SO's favorite soup.  The only problem with it is that it has the
carby pinto beans.  I haven't tried making it without, I just limit the
amount I eat, but it probably could be made without them and maybe increase
the cabbage.   Calculations are from FitDay, your sausage, etc., may vary.
Numbers after ingredients are carbs for each--total-fiber=net.  The original
recipe contains the sugar, I have always just left it out as my SO doesn't
like the sweetness.  I also use a can of Rotel tomatoes (tomatoes with
jalapenos in them, there are other brands as well) for the diced tomatoes
and then don't need the jalapeno.

         Sausage Soup Ol?

1 lb. smoked sausage(cut in 1 in. slices, or diced, as you prefer)  12
1 can(14-15 oz.)stewed tomatoes  27-4=23
1 can(14-15 oz.) sliced or diced tomatoes in juice  14
1 can(15-16 oz.)pinto beans, undrained  65-20=45
1 can(14 oz.) chicken broth
1/2 of a medium head of cabbage, chopped fairly large  25-10=15
1 Tbs. chili powder  4-3=1
(2 tsp. sugar or substitute) 8 if used
1 jalapeno pepper, seeded and minced  0
1 medium size onion, chopped  9-2=7
2 cloves garlic, minced  1

TOTAL   168-39=129, makes approx 3 quarts, 6 2-cup servings.  Per serving
426 cals, 29 g fat, 21 net carbs, 17 g protein.

Put all ingredients in soup pot. This will look to thick to be soup, but
will
become less thick as cabbage cooks down. Lower heat and simmer from 30 to 60
minutes, depending on how soft you prefer your cabbage.

Try substituting white soy beans.  Eden makes them, although they're
harder to find (IME) than the black soy beans they sell.  Very low carb.

Sweet and Sour Cabbage Soup (lowcarbluxury.com)

1/4 pound sliced bacon, cut crosswise into thin strips
1 large onion, chopped
3 ribs celery, chopped
1 1/2 teaspoons caraway seeds
2 garlic cloves, minced
1 teaspoon crushed red pepper flakes
1/4 cup balsamic vinegar
2 tablespoons Splenda
6 cups finely sliced red or green cabbage
1 cup chopped and drained plum tomatoes from a can
6 cups chicken stock
Salt and freshly ground black pepper
1/4 cup finely chopped fresh parsley
Sour cream and finely chopped fresh chives, as accompaniments

In a large saucepan, cook the bacon over moderate heat until crisp. Remove the
bacon with a slotted spoon and drain on paper towels. Pour off all but 3
tablespoons of the fat. Reduce the heat to moderately low. Add onions and
celery and cook until onions are translucent. Add the minced garlic and crushed
red pepper flakes and cook, stirring, for 1 minute. Stir in the balsamic
vinegar and Splenda, and bring to a simmer.

Stir in the caraway seeds, and add the cabbage; stir to combine. Add the
tomatoes and the chicken stock and return to a simmer.

Season with salt and pepper, to taste. Simmer the soup, uncovered, for 30 to 40
minutes until the cabbage is very tender. Taste soup and adjust seasoning with
more balsamic vinegar, Splenda, salt and/or pepper.

Stir in parsley. Serve hot with a dollop of sour cream and chives.

Makes 6 servings –– 3.5 effective grams of carbohydrate per serving.

get pork of beef with good amount of fat, cut in small pieces, boil

shred cabbage, slice carots, add a bit of potatoes (however much your
diet allows), add a few green peas, add into the mixture, boil for
about 20 minutes.

I love shredded cabbage and onions sauteed in butter served with
kielbasa.....

but here's one of my fav soups:

Cabbage soup thai style, not sure of the measurements, it just makes a
huge pot.

shredded cabbage
1 can stewed tomatoes
1 small onion
1 can straw mushrooms (do not drain)
1 can pineapple chunks (do not drain)
1 small can sliced bamboo shoots (drained)

4 cups chicken broth, 4 cups water (told you it makes a big pot)

you can add chicken or shrimp or leave it veggetarian.

1 T Tom Yum soup base.  or use 1 whole red chili pepper

bring all ingredients to full boil.  

add large handfuls of fresh beansprouts. turn off heat.  garnish with
chopped cilantro.

this is no fail, add veggies that you do like, take out what you don't
like.

I think brussel sprouts are similar, and I kind of accidentally made a
good soup out of them.

First fixing wasn't soup but turned out great:

fresh brussel sprouts quartered, curry powder, salt, butter, liquid from
old sour cream,  microwave on 50%. Wonderful, savory, all the liquid
cooked away leaving some leaves carameled like in a sauted basil dish at
a Thai restaurant.

Tried it again with fresh sour cream. Somehow this had more liquid and
came out as soup, but good.
