looking for salad recipes please

hi everyone,

I'm running out of ideas from my usual:  grilled chix ceasar, grilled
shrimp ceasar, beef thai salad, salad nicoise...and if i eat any more
spinach, my skin will turn green.

do you have any great salad recipes?

How about layered salad?  Here's a recipe for around 6 servings:

Greens (your choice) - I usually use 2-3 cups of romaine
1 small package of frozen pea pods, thawed (or the equivalent raw,
blanched and cooled)
1 bunch green onions, chopped, including most of the greens
1/2 c. grated cheddar cheese
1 large cucumber, sliced thin
1 red pepper, diced fine
1/4 pound bacon, fried crisp, and crumbled
Salad dressing of your choice (I usually use a ranch)

In a large bowl (you may use a glass bowl of you'd like to see the
layers), layer lettuce, pea pods, red pepper, cucumber, green onions,
cheddar, bacon.  Serve.

I'm glad you mentioned this, Queenie!   I just bought a chopping attachment
for my hand blender yesteday, and I have a nice head of cabbage in my
refrigerator.  Cole Slaw!  Yum!
What else would you put in it?  I have some lemon juice and mayonnaise.

i don't make cole slaw very often, i just use cabbage instead of lettuce
for any salad i make.  i usually throw in some avocado and some protein
of some sort - chopped turkey, chickenn or roast beef - and sometimes
some seeds (sunflower or sesame).  i don't have a lot of time when i'm
home for lunch, so i don't get too fancy :)

I was surfing and saw avocados recommended to reduce insulin -- and
grapefruit for the same.  So today I tried a salad of avocado and
grapefruit and it was very good! Avocado bits in the grapefruit juice
especially.  (I used 'ruby red' grapefruit, dunno if that makes a
difference in the insulin effect.)

There's also a good salad of avocado, grapefruit, and some sweet fruit
(persimmons or bananas are good, maybe chopped apple) with Italian
dressing.

I've been really enjoying the Greek salad at a supermarket near work, and
plan on imitating it as soon as we get around to grocery shopping!

It contains:

Red, yellow, green and orange capsicum/bell peppers
Cucumber in big chunks
Red onion
Pitted black olives
Feta cheese

The dressing tastes like it's just an oil and vinegar, perhaps with a little
sweetener.

At home lately I've been making up a salad with a variety of lettuce and
rocket leaves, avocado, feta cheese, gherkins/dill pickles, gouda cheese
with cumin seed (I think it's a Dutch cheese), and a smidgeon of roasted
capsicum pesto, with a little of Paul Newman's classic salad dressing
drizzled over the top.

Our favorite very simple salad is
 one cucumber, sliced
 one bell pepper, chopped
 2 or 3 slices mild onion, like Vidalia or bulb onion, pulled apart
 
  *if on induction, scallions (green onions) have less carb than
   mature onions.

Sprinkle with salt and pepper, toss, and marinate a little while in
Italian Dressing or vinaigrette.

I make up Good Seasons Zesty Italian packets, with a nice cold-pressed oil,
a little flax oil, and cider vinegar.  I like it tangy, so I fill the
vinegar to the water line and omit the water.  (It does contain a
little bit of sugar, but only 1g per serving.)

My  favorite salad has very similar ingredients, but I start with chopped
lettuce; about 2 cups per serving.  The I dice about 1/4 cucumber, chop a
few strips of green pepper, a few sliced green olives and come chopped green
onion.  Instead of dressing, I drizzle with a couple of tablespoons of extra
virgin cold-pressed olive oil, crumble some sage and oregano on it, then top
with a sprinkling of shredded mild cheddar cheese.  Yum!  That's what I had
for dinner tonight, and it was so satisfying I didn't need any meat.

The salad has 5g of carbs, three of them fiber, adn 266 calories including
the oil.  Plenty of healthy unsaturated fats , and it's deee-lishus!

Hi Diem,

I just finished a salad of lettuce, olive oil, red wine vinegar, Italian
seasoning, diced pepperoni, shredded mozzarella, and chopped black olives
(sliced would be better).  It was just wonderful!
