Part of lunch today: sliced cucumber, with some garlic-and-herb-flavored
cream cheese spread, topped with a few bits of diced red bell pepper. On a
couple of them, added a drop or two of some Vermont Pepperworks habanero
hot sauce.
Crunchy, colorful, and tasty. I'm going to have to remember to put these
out as appetizers at Christmas (minus the habanero sauce, probably); they
were very festive looking.

You mean you just spread the cream cheese on the sliced cucumber? or did
you dip the cucumber in the cheese? That's a combo I haven't tried yet...

I spread it on. (I blotted the cuke slices with a paper towel first so the
cream cheese wouldn't slide off.)

Mmmmn. We sub cucumber for crackers a lot these days. It helps if you
blot the slices on a paper towel before you put them out, because they
tend to be moist and if they are the cream cheese doesn't stay very
well.
We like ours with a little bit of smoked salmon and some finely
chopped onion.
You can also mix cream cheese, sour cream, and chopped salmon for a
tasty veggie dip. There are many recipe variations online.

Slices of cucumber with Armenian string cheese w/ caraway seeds.
Pull the strings, don't cut across the grain of the cheese, and pile onto
the cucumber.
