Sour Cream recipes?

I had an interesting experience at the grocery store yesterday. When I
selected my food, it dawned on me that I was not consciously on a diet, that
this is actually how I *prefer* to eat. Does anyone have ideas on what to do
with sour cream? Impulsively, I bought a tub of it and now I don't know what
to do with it. I used to put it on potato.

Mix it with some dill and mayo and it's great on salmon :D

mix a tablespoon into two eggs as you're scrambling them.  Yum.

It's beginning to feel very natural to me too.

I love sour cream too. It has a little powdered milk added, thinking of
adding more for more protein. Or would that be lactose=sugar? Or would
the sour cream turn the lactose into something slower to absorb?

Anyway, uses. Dips for raw veg. Salad dressing. Base for cheese sauce
for hot veg.  ?Some substitute for potatoes au gratin: cauliflower au
gratin? WAter chestnuts?
Cheese-cake-ish fudge: mix with cream cheese, flavoring of choice; I'm
going to try adding some grated raw carrots to make a sort of carrot
fudge.
Add to yoghurt drinks to cut the acid, make a more mellow taste, slow
absorbtion. Might be good in a fruit drink without the yoghurt.

Chicken & Sour Cream Enchiladas

Ingredients:
2 cups sour cream - divided
2 cups chopped cooked chicken breast
8 ounces shredded Colby or Monterey Jack cheese - divided
1 cup thick 'n chunky salsa (Newman's Own is great here!)
2 Tablespoons chopped fresh cilantro
1 teaspoon ground cumin
10  6-inch low-carb La Tortilla Factory tortillas
1 cup shredded lettuce
1/2 cup chopped tomato

Preheat oven to 350?F.
Mix 1 cup of the sour cream, chicken, 1 cup of the cheese, 1/4 cup of the
salsa, cilantro and cumin. Spoon about 1/4 cup of the chicken mixture onto
each tortilla; roll up. Place, seam-side down, in 13 x 9-inch baking dish.
Top with remaining 3/4 cup salsa; cover.

Bake at 350?F for approximately 30 minutes. Sprinkle with remaining 1 cup
cheese; continue baking until cheese is melted. Top with lettuce and tomato.
Serve with remaining 1 cup sour cream.

Serves 6.   5 carbs per tortilla.

Savory Mushrooms in Sour Cream

These savory mushrooms make a perfect accompaniment to grilled steak or
other beef dishes. This is a low carb recipe, too!
2 tablespoons butter,
1 tablespoon olive oil
16 ounces mushrooms, thickly sliced
4 green onions, sliced
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon Worcestershire sauce
2 tablespoons sour cream
In a large skillet over medium low heat, melt butter with olive oil. Add
mushrooms and cook for about 4 minutes, until nicely browned. Add green
onions, salt, and pepper; cook 2 minutes longer. Stir in Worcestershire
sauce and sour cream; heat through, but do not boil. Serves 6 as an
accompaniment to steak or other meat dishes.
Grams per serving (about 1/3 cup) - carbs 4, dietary fiber, 1
Calories - 86 g
Total Fat - 7 g

Jean,

Sour Cream goes great with mexican food! Serve a dollop with Fajitas
or on top of Albondigas (Mexican meatball soup). Mix some in with the
avocados for an extra creamy Guacamole. How about this?

In a small cassarole dish put a layer of Taco seasoned cooked ground
beef. Add a layer of your favorite salsa and a layer of shredded jack
and cheddar cheeses. Heat until the cheese melts. Add a layer of
Guacamole and a thin layer of sour cream. Sprinkle the top with diced
tomatoes, sliced black olives and a bit more cheese. Voila! Your own
low-carb 7-layer dip! Dip in to it with celery sticks, cucumber slices
or, my favorite, a big spoon!

Add a little Splenda and put it on blueberries or sliced strawberries.

Stir in a little onion powder and garlic powder and use it as a dip for
veggies.  (To me, it tastes sort of similar to Hidden Valley Ranch dip mix,
but without all the maltodextrin, which is the main ingredient of that
mix.)

You could also try making "Trey's Best Morning Flaxcakes"; that includes
sour cream in the ingredients list.  (The recipe has been posted in this NG
many times, most recently in the "Your favorite breakfast food?" thread a
couple of days ago.)

                     Trey's Best Morning Flaxcakes

Recipe By     :Trey Ethan (asdlc)
Serving Size  : 2     Preparation Time :0:15

 Amount  Measure       Ingredient -- Preparation Method

    1/2           cup  flax meal
 2                     eggs
 3        tablespoons  heavy cream
 3        tablespoons  sour cream
 1         tablespoon  Splenda® granular
 1               dash  nutmeg
 1               dash  cinnamon
    1/4      teaspoon  baking powder
 1         tablespoon  oil

Whisk ingredients together until smooth.  Mixture should be thick, but very
pourable.  Add water to thin or flax and sour cream to thicken if
necessary.  Allow to sit for about ten minutes to thicken and sour.

Preheat electric griddle to 325F or heat a large, preferably nonstick pan
over medium-high heat.  Spray with cooking spray, and drop mixture in
approximately 1/4 cup ladlesfull.  Cook for four minutes, flip, and cook
for four minutes more.

Makes two servings of 2-3 flaxcakes each.  4.5 g effective carbohydrate per
serving.

A topping for low carb cheese cake. I felt the cheesecake was missing
something so I mixed 3 T sour cream, splenda and a squeeze of fresh lime
juice. Fantastic taste- good out of the bowl.
