Greek Salid Recipe ?

cdrew1 - 21 Mar 2004 15:14 GMT Does anyone have a good greek salad recipe. I continuously buy it at the supermarket, but its expensive. In it, I'm able to recognize green pepper black olives feta cheese onion

Dress it with Extra Virgin olive oil, a couple dashes of red wine vinegar, a dash of oregano, salt and pepper. It's simple and basic. Properly called the Horiatiki (village salad). You can also eat it with some tsatziki (drained full fat yogurt, shredded cucumber and garlic dip) if you like. I have no clue if that is low carb or not. I haven't made any since starting low carb. If you want to make your salad less carby, don't put alot of tomato and onion in. Monica

Andrea Bostrom - 21 Mar 2004 16:54 GMT I got this one off the Internet and I love it. I'm on maintenance so the lemon does not bother me. Everyone seems to love it:
1 head romaine lettuce- rinsed, dried and chopped 1 red onion, thinly sliced 1 (6 ounce) can pitted black olives 1 green bell pepper, chopped 1 red bell pepper, chopped 2 large tomatoes, chopped 1 cucumber, sliced 1 cup crumbled feta cheese 6 tablespoons olive oil 1 teaspoon dried oregano 1 lemon, juiced ground black pepper to taste 1 In a large salad bowl, combine the Romaine, onion, olives, bell peppers, tomatoes, cucumber and cheese. 2 Whisk together the olive oil, oregano, lemon juice and black pepper. Pour dressing over salad, toss and serve.

There are other greek salads, like the Kofti, which is thinly cut romaine and some fresh herbs like dill. You can put lemon juice in that one if you like. But not for the regular Horiatiki. In Greece, at restaurants you won't even get the Horiatiki with the red wine vinegar (as I had suggested), just olive oil and spices. In alot of greek homes you may see it though. We use lemon juice in most everything else, like cooked/steamed veggies with olive oil, marinades for meats, pilafi (rice), and of course those incredibly orgasmic roasted lemon potatoes *sigh* which I haven't eaten since LC'ing. Lemons are used alot in greek cuisine, but please not in a greek salad. Eww. I personally have cut back on alot of lemon since it can be carby...well the amount I would use. Anyhow, sorry, just wanted to add my opinion in. Monica

I would love to go back though. My father's family is from northern Greece but I don't think anyone still lives there. My ex-husband was stationed at Hellenikon Air Base just outside Athens so that's how I came to be there for 2 1/2 years. We lived in Ano Glyfada. Absolutely wonderful country!

I always got some type of lung infection or bronchitis when I went there. But the rest of it is fantastic. Monica

I've just finished another delicious serving of Greek salad from the local supermarket, and have carefully ferreted away the container to use when I make my own! It *is* very expensive.
I've bought the ingredients, I just haven't had time to make it this week!
The one I get has:
Red, yellow, green and orange bell peppers/capsicum Chunks of cucumber red onion pitted black olives feta cheese
And according to the label of ingredients the dressing must be salt, pepper, blasamic vinegar and honey mustard
I plan to try and imitate this with malt vinegar and regular wholegrain mustard and perhaps a little splenda if I think it needs it.

That's what's so great about Greek salads, you don't have to make a dressing
Chunks of tomato, gr pepper, onion, cukes feta cheese and Greek olives (kalamata kind of olives) olive oil and oregano
