Only that when you go to flip the omelette it will slip off
the spatula easily -- so take care! :-)

The calorie and carbohydrate count for fats is roughly the same whether it is
butter or oil or grease, isn't it? About 100 - 115 calories per tablespoon and
0 - 1 gram of carbs.
But fats vary in other ways, like saturated fat and cholesterol levels.
I use bacon fat all the time, but pour off most of the grease to leave about 1
tablespoon or less. Bacon grease has a great flavor. I don't need to salt eggs
when cooked in bacon fat.

The pork fat that renders off of breakfast sausage is incredibly
tasty.

No. The problem is wasting a drop of the valuable oil.
But if you choose to drain off the bacon fat and replace it with an
equal amount of nut oil for the polyunsaturates, go right ahead. It
is not the quantity it is the chemical qualitites. Trading the good
for the better.

I ate alot of bacon in the beginning but now I have cut way back because
of the nitrites/nitrates. Bacon grease I imagine would not be healthful.
Absorb the grease with paper towels, use butter for your omelet.
I also eat alot of eggs so I have started buying organic eggs to cut down
on toxins.

According to my cookbooks, walnut oil doesn't withstand alot of heat and is
best used for salad oil. Olive oil is great for cooking.

Walnut oil is better for salad, it doesn't withstand heat well.
For eggs and sauteing certain vegetables (where I don't like the flavor
of stronger olive oils), I prefer equal parts butter and extra light
olive oil. The butter for flavor, and the oil to help prevent the
butter from burning.

Good choice...much healthier than bacon grease by a long shot. Also
check out Grapeseed oil. Both high in Omega 3s...
