substitute ingredients - dana carpender's books

Two things....

Is there anything that I can substitute for bourbon (apricot bourbon
chicken)?  I have whiskey and brandy, but no bourbon!  If it has to be
bourbon, I will get some.

Also, she uses in a lot of recipes guar or xanthan.  Where can I get this.
Is there a substitute for this.

How about the fish sauce she talks about?

I'm thinking I wouldn't try and substitute for bourbon, since it has a
distinctive flavor.  As far as where to get Xanthan, you can usually find it
at a health food store, or at www.bobsredmill.com though I'm sure there are
other places too online.

I love bourbon but in a recipe a blended whisky would work. The flavor
difference would be small. Even the brandy would work.
The gums you can get at healthfood stores.
Fish sauce is the southeast asian equivelant to soy sauce. It's used in
Thai, Vietnamese, Cambodian, etc. cooking. Any good asian market will have
it.
