Had this for dinner tonight and DH wouldn't have known it wasn't rice if I
hadn't told him. This was REALLY good!! Original recipe from
http://headed-west.com/veggies2.htm but I changed it a bit. Here's my take
on it:
FAUX FRIED RICE (4 servings)
2 tbsp olive oil
2 tbsp minced garlic
1/2 head cauliflower, grated (about 2 cups), uncooked
1/2 cup chopped white onion
1/4 cup chopped green pepper
1/2 cup frozen 3 Pepper Onion blend (Krogers sells it)(or just add more
green pepper and onions - I used this because it added the yellow and red
pepper for color)
1/2 cup grated zucchini
1 tbsp soy sauce
2 tbsp tamari soy bean sauce
1/4 tsp ginger (powdered spice)
1 tbsp capers (optional, but adds a distinct flavor)
1-2 cups any leftover meat (I used cubed pork roast)
1 egg, beaten with 1/2 tbsp cream
In a wok or large fry pan, heat oil. Add all vegetable ingredients and fry
and stir on medium high heat for approx 5 minutes. Add soy sauce, tamari
sauce, capers and left over meat, cook on low for another 5 minutes,
stirring occassionally. Push all ingredients over to one side of pan and add
eggs and scramble in the open area of pan. When cooked, mix eggs in with all
other ingredients.
According to Fitday, the entire recipe (with 1 cup of pork roast, diced) is
641 calories, 17 g carbs (26 carbs less 9 fiber), 41 g fat, 46 g protein.
So, per serving: 160 cal, 4.5 carbs, 10+g fat, 11+g protein.
And it was REALLY really good - nice "Chinese restaurant" flavor! And unlike
"real" Chinese food, here it is two hours later and I'm still not hungry!

Actually no.
Tamari and soy are alike, but not the same.
Soy sauce is made with: soybeans, roasted wheat, sea salt, water and
koji (a mold spore that causes the needed fermentation).
Tamari is made with: soybeans, sea salt, water, and koji.
Tamari is wheat free and popular with those who have wheat allergies and
low carbers ; )

I agree that Diabetic Depot is about the only place to get low-carb stuff
in Calgary, but even they don't carry a large selection. I end up ordering
most things online.
Community Natural Foods is another good place to get soy protein powder,
xanthan gum, etc. if you're going to use them.
