Evelyn Ruut - 23 Mar 2004 21:25 GMT There was a lady giving out snacks, who had some canned salmon mixed with Ranch dressing into a spread. It was absolutely delicious. I bet it would go well on cucumber slices or on celery sticks.

That being said, I've seen tuna-size cans of salmon at Sam's Club that has the skin and bones removed. That may help. I'm not sure, because I'm not willing to try it. <G>

Try it on the grill--rub some olive oil on it and then rub mustard seeds all over the top. Sear the side with the mustard seeds on until crisp and then cook from the other side until done. Delicious.

The canned salmon at Costco is very mild and delicious, don't know about Sam's Club, I never bought any there. I second the idea of using Ranch dressing for fish, though. I make tuna salad with tuna, chopped celery and Ranch dressing, serve it on Romaine lettuce leaves.

It's so funny how folks respond differently to foods. I'm just the opposite from you. I can't stand pre-cooked tuna because eating it makes me feel like a can of cat food for the rest of the day.

It's worlds better than the regular stuff. More expensive, but worth it.

I totally agree - you may be buying farmed salmon which has a totally different taste than wild salmon. Costco's canned salmon is wild. I'm fortunate to have a brother who is an avid fisherman. He catches tons of lake salmon all summer and freezes, cans, smokes - and whatever else he can think of...LOL He doesn't like it - so he gives it all to us.

Yes, it is excellent.
Another way of getting rid of the "fishy" taste is to bake it skin side up and put a good amount of milk in the baking pan.
You end up tossing away the milk after cooking, but it does remove the fishy flavor.
The skin ultimately becomes like a crust that is easily lifted off in one piece, leaving just the beautifully cooked salmon underneath.

Be sure it is fresh from the store too. It doesn't seem to store well, so buy it the day you plan to use it.
All you do is take a flat pan (with a lid), put water in it, slice a lemon into the water add salt and a bayleaf, and perhaps a sprinkle of old bay seasoning.
When the water comes to almost a boil, you lower the heat and add some pieces of salmon filet (or salmon steaks).
You allow it to simmer VERY low flame for 10 minutes or so - just till it is no longer red but cooked pink all the way through. Time depends on how thick they are. Don't overcook and don't let the water actually boil hard...... keep it just below a boil.
Remove with a slotted spoon and serve with a sauce made of mayonnaise mixed with some mustard and lemon juice.

**** Another favorite way we cook it, is to sprinkle it lavishly with "Seafood Magic" from Chef Paul Prudhomme.... (they sell it in the spice aisle). Anyway once it is sprinkled with that, you just pan saute it in olive oil till it is browned on each side. It is absolutely delicious... even the next day cold.

FOB - 25 Mar 2004 01:28 GMT My house is just the opposite, everyone loves salmon, that's me, SO and two cats! In fact we like all kinds of fish, catfish and tilapia are also very popular here. I always say catfish is so named because the little noses start twitching as soon as I get it out to cook.

If you like tuna salad made from canned tuna and mayo, chances are you'll love salmon salad mode from canned salmon and some combination of ranch dressing, sour cream and/or mayo.

I took a can of Salmon, drained, melted some cream cheese to make it mix better and added some capers (ya gotta have capers with Salmon, oh definitely), and ate the mix on top of homemade fiber crackers (from Dana Carpender's 500 Low Carb Recipes).
Oh, happy day.
You could also add chopped green onions to the mix.

I just bought a can of it last week because I've never tried the canned kind and I thought it might be handy to have around for on top of a salad when I'm feeling lazy about cooking. I do think that this idea of mixing it with Ranch dressing sounds pretty good though, I'll have to give it a try. Thanks for the idea. Tracey in CT
