I like to use chopped celery, toasted pecans (avail. at trader joe's if you
have one), salt&pepper,pinch of dried tarragon, BestFoods mayo, dot of
mustard, and depending on where you are in your plan, maybe you could add a
couple tablespoons chopped Granny Smith apple.

Another option is to mayo some of the chicken, and make somewhat of a tuna
melt, except w/chicken- place slices of tomato on top, cover w/ Jack cheese
and broil-- yummmm!
