I started with:
1 medium cooked chicken breast, skinless and boneless (2.5 points)
2 slices of lean ham (1 point)
20 black olives in brine (1 point)
a dribble of extra virgin olive oil and balsamic vinegar (0.5 points)
1 large tomato
1 medium carrot
1 spring onion
4" cucumber
1 courgette (zucchini)
half a yellow capsicum
3 mushrooms
I chopped or sliced, each according to its need, stirred the whole lot
up in a bowl, divided it in two for DH and me, and served it with bread
spread with low fat olive spread.
It made each of us a HUGE pile of salad - at least 2 portions of
vegetables each. It filled the pasta bowls I served it in to an
impressive heap! All the veg are zero rated in the UK, so that was a
BIIIG salad for 2.5 points each. I had 2 slices of bread sandwiched
together with a little spread for another 2.5, and I shall follow it
with a Muller Light yoghurt for another 1.5 and a dairy portion. Lunch
for 6.5 points, encompassing a dairy portion, plenty of protein, 2
portions of veg and enough carbs to fill me up for a while! Can't be bad!
Dinner tonight? Ooer! I just looked at the menu, and today is the day
I forgot to plan for! Well, I *could* dig out the frozen cooked beef
mince, the 3 bean cassoulet, or something from the store of made things,
or we could start afresh with chicken or fish or sausages... Dunno what
I want, I'm not hungry now - I'm full of salad! :)
