What can I use instead of cream in soup?

Hi...I want to make a roasted garlic & tomato soup taste creamy. The
garlic, onion, tomatoes and soup stock have no points so I want to keep
it low.

Any ideas on what to use instead of heavy cream? 1% milk seems like it
would be fairly useless. I don't want to throw something in that would
make it too many points or make it sour.

Thats what I was going to suggest! I use it for my famous cream of mushroom
soup - much creamier than fresh milk. Yum! I wish it wasnt the middle of
summer where I am - all this talk of hot creamy soup is making me hungry!

Stir in fat free plain yoghurt just before serving (not when the soup is
on the boil as it will curdle). Another lovely soup-enhancement is
quark, which is fat-free cream cheese. Very nice with mushrooms.

What you could also do is no cream in the soup, but just before serving
adding some fat free Philadelphia cheese. I do that quite often, adding the
one with herbs, I guess you have that in the US as well ??

How about blending some kind of vegetable into a soup consistency and then
adding it in?  That would thicken it some and not add points if it was
celery or carrots or something like that.

I'm in Vancouver and I just found Carnation FF Condensed milk at
Safeway.  Will defenitely try it in a few cream of veg soups.

If it wasn't for low point soups, I don't know if I could succeed on WW
- they really fill me up.

I really like my zero and low point soups too, but have yet to try a
really creamy one.  I shall look out for FF Carnation too: could be a
nice addition to the menu for cold day lunches.

On warmer days we have salad.  Cold days we need vegetable soup instead.

I do flex not core but I use the FF(LF) Cream of mushroom/chicken soups.
Taste the same to me but much lower in fat 94%.  I know this isn't core but
the points wouldn't be too much would they? 3 points/cup.
They are a newer item here on the east coast, so not sure if they are
everywhere or not.

My can of Campbell's Condensed cream Of Chicken soup - 99% far free -
works out at half a point per 100g once reconstituted with a can of water.

I use it in a chicken casserole recipe.

Isn't it though??? Sometimes the strangest things can make me think of Tony.

Add some corn starch (or other thickeners, such as tapicoa flour,
potato flour, or xanthum gum if you have gluten allergies)  to skim to
thicken it and it will work just fine. Make a paste with the thickener
and a little liquid first, then slowly add the rest, mixing as you go.
This prevents lumps.

Another option is to add a potato or two to the recipe, The potato
starch will also act as a thickening agent.

I remember that recipe.  Is that the guy that played music or is that Ray?

What happened to Tony?  Did he die from weight-related issues?  Just
curious.

Oh no, I didn't know that.  I do remember him seeming to be an upbeat kinda
person and talking about his music-playing in clubs.

Isn't that the truth.  He was only around for about a month from the time I
first joined the group.  I remember him mostly for saying it like it was and
not beating around the bush.  I like honesty in a person.
