One Point Hearty Chili

This was a recipe that was lying around at our Weight Watchers meeting.
Since it is against their policy to hand them out to members.  We were told
about this one and if you wanted one you were welcome to take one.

One-Point Hearty Chili

Makes 20 servings

10 ounces extra-lean ground turkey breast
1 medium onion, diced
2  (28 ounce) cans diced tomatoes
2 medium zucchini, diced
2 medium yellow squash, diced
1 ( 15 ounce) can black beans, rinsed and drained
2 (15 ounce) cans fat-free reduced sodium beef broth
4 celery stalks, diced
2 green bell peppers, diced
1 (1 1/4 ounce) package dry chili seasoning

1. Spray a large nonstick skillet with non stick spray and set over
medium-high heat.  Add the turkey and onion and suate until browned, about 5
minutes.

2.  Transfer the browned turkey and onion mixture to a large soup pot and
add the tomatoes, zucchinin, squash, beans, broth, bell peppers, and chili
seasoning.  Bring to a simmer over medium heat.  Continue to simmer until
the vegetables are tender, about 30 minutes.

Per Serving (1 cup): 76 calories, 1 g fat, 0 g saturated fat, 8 mg
cholesterol, 270 mg sodium, 11 g carbohydrates, 3 g fiber, 7 g protein, 45
mg calcium

This sounds yummy. Any idea how many points if you used lean hamb meat
instead of ground turkey? I have some friends that don't like ground turkey.

I would think if you use the leanest ground beef (we have 4% fat available
here) that it would be the same.

Thanks. I'm going to try this recipe. We love zucchini and yellow squash so
this is a perfect recipe for us.

How about ground boca?  We have gotten away from most ground beef and sub
ground boca instead.  I use it in my chili, but then my chili is just kidney
beans and a package of boca with chili powder.

Is ground boca the same as tvp?(textured vegetable protein.)

I think so, it is put out under the Boca name.  Less fat than the garden
harvest kind

I would think the ground boca would be fine too.  Check the labels for the
nutrition info and see if it is about the same as the ground turkey.  That
is calorie and fat wise.  With Boca you might have a bit higher fiber and
that might even lower it more as long as the calories and fat are
reasonable.

when we looked at the turkey in the store most of it was higher in points,

I noticed that too. I think the fat content in the ground turkey is a lot
higher than what we are expecting. Most of them include turkey skin in the
processing which is bringing up the calories. The ground turkey is aimed at
folks not wanting to eat meat not aimed at low calorie eating. Its a shame
they they can't omit the skin and make a low fat and low calorie product.

speaking of turkey, DH and I both love turkey.  He suggested that we just
keep roasting them like we do and shred the breast meat when ground turkey
is called for, same effect/lower points, Le, who would roast 1 every 2 weeks
