I just made a very different lunch. All core and yummy.

I had some frozen salmon (4.5oz piece). I precooked it in the microwave
until almost cooked. I made up a small batch of couscous (1/4c dry). While
the couscous was "cooking" I put 2 teaspoons of canola oil, 1/4c
chickpea/red bean combo, the salmon and some sprouts into a small frying pan
to make a "stir fry". In the end I added the couscous to the frying pan and
let it cook up a bit. Split the mixture in half as I will have the rest
tomorrow for lunch. Turned out very yummy and filling. For dessert I had a
grapefruit.
