Crock pot meal

I work weekends and spend a lot of time on the road. I take my lunch
with me, but dinners have always been a problem because i never feel
like cooking when i get home. Hell, I never feel like cooking anytime!
LOL Yesterday I decided to bite the bullet and put something together
that would be ready when I got home from work. Sorry I can't be more
specific about quantities - but this is definitely Core, and you
points counters could easily figure it out.

CrockPot Chicken Thighs

8 frozen solid chicken thighs
shredded cabbage - maybe 4 cups
chopped garlic - lots
1 large yellow onion
about 1/2 cup frozen peas
about 1 cup frozen cauliflower
1 small can tomato paste.

Put it all in crockpot in no particular order at 6 am and by the time
i got home at 5 it was to die for! Tasted too good to be diet food I
tell ya!

Sounds yummy.

We added a 3.5 round roast, 1 package onion soup dry mix, salt & pepper plus
enough water to cover on low for 6-8 hours. With an hour left we added
peeled potatoes to the pot. DH did steam some cauliflower in a separate pot
on the stove. It did turn out well done meat (I prefer med rare) but it was
tasty and easy to throw together.

A lot of crockpot receipes can be modified to make them core just like you
can with regular receipes. Have fun experimenting.

I cut 4 chicken breast in two put them at the bottom, added onions, celery,
carrots, zucchini, yellow squash, broccoli and potatoes (little red
quartered with the skin)... added some chicken broth and veggie broth (ran
out of chicken broth) salt pepper oregano..

Et voila.. 8 servings !

That should read 'tomato sauce.' Sorry - sauce is Core - I don't think
paste is.

Tomato paste is also core.

Lynne, the recipe sounds great. Given that you put in frozen chicken, do you
cook this on High--or does the long time on Low work? (I contracted
salmonella poisoning in 1970 and am still scared spitless to get it again.)

By the way, I'm finding my Crock Pot to be helpful in getting more cooked
dried legumes into the diet. (There's too much salt in the canned
varieties.)

My pot has an 'auto' feature which starts out on high and then at some
point in the day switches to low. I would imagine that a long time on
low would work - it's easy enough to tell if chicken is done. Mine
probably spent a lot longer time in the pot than it needed to, but it
was falling apart and soooooo yummy!

I could have put this in my previous post, but I'm a tad braindead
this day...LOL I use my pressure cooker for dried legumes. I don't
even have to plan ahead when I'm going to use them because they only
take about 20 minutes to cook with pressure.

I have made it a life goal to never turn on the stove or oven, so far in 12
years I am successful at the oven part, I will use the crock pot and micro,
only have turned on the stove a few times, to make DH soup when he was ill,
