Hey Laura - don't know how keen you are on cooking yourself, but this
is something you could try that is definitely core, and looks sorta
like the Lean Cuisine things. It would take a bit of effort on your
part initially, but once you have a bunch made up, you can just stick
them in the freezer and pretend...LOL I've made this dish twice, and
we both really like it. Sorry for the lack of measurements, but it's
pretty hard to screw up.
First you boil up some whole wheat spaghetti - use as much as you need
for however many servings you're going to make. I calculate about 1/2
cup cooked pasta per serving, and we've been experimenting with
different types - spelt, kamut - really good alternative to regular
whole wheat with a bit more texture and flavour. When it's cooked,
drain and toss with a teensy bit of olive oil. Add your fave herbs or
spices - we're garlic freaks so I won't even tell you how much I
add...lol
OK - so once you have the pasta cooked - lay out some sheets of
parchment paper on a baking sheet. About a one foot square per
serving. Place the cooked pasta in the center of the sheet. Top with a
serving-sized piece of your favourite fish (I've used both salmon and
haddock.) Spread a bit of dijon mustard on the top side of the fish.
Add a few asparagus tips to each serving and then top with julienned
pepper and zucchini strips.
Fold the parchment around the whole deal so it's all sealed up.
Bake in a 350 degree oven for about 20 minutes. If you don't like
asparagus on the crisp side you could parboil it first.
Now I would *think* that once this is cooked and cooled you could put
each packet in a freezer bag and store for future use.
It makes a very tasty and filling meal and is really easy to put
togethe AND it's Core.

I'm not really good on cooking but this recipe I could handle. Nice and
simple. Thanks for sharing.
The other thing that I made frequently when I was taking lunch to work were
Glad/ziploc square containers of cooked chicken or fish plus mixed frozen
veggies. I would make 5 up on sunday afternoon and stick them in the
freezer. We had a microwave at work and this was cheaper than the WW or LC
meals. It think mine had more protein than the ones you buy in the store
too.

As I understand the lit and my leader, If all the ingredients are core, then
it's core. I haven't had a chance to check out the other stuff, but the
salmon one is whole wheat pasta, spinach, carrots and salmon - all core.
After looking at the Australian selections, though, I feel jealous -
especially on the frozen soups! If they can make them there, why can't they
make them HERE!!!!!

I'd have to look at the full list of ingrediants to be able to say if they
were core. The ones with peanut and coconut were definitely not core. I
don't know about the others.
This is one of the reasons that I have switched back to flex. I don't cook
dinners as that's DHs job. I'm not in control of that meal at all so I found
it difficult to stay within my 35 wpa. Plus I was not eating enough points.
As a result I stopped losing. I think I'm back on track now. I'm still
eating core meals for breakfast and lunch but I don't worry about dinner as
much as I used to. Less fighting in our house too. DH and DD did not want to
put up with my "restrictions".
