I simply like to place a piece of pickerl on a plate and microwave it for
one minute and then I place a 1/2 of a cheese slice on it and microwave for
10 seconds and I love it.  I also take canned tuna and mix it with pineapple
pieces instead of mayo and it is so good with salad.

I use the unfried catfish recipe from Oprah's former chef Rosie.  Season
the fish with lemon pepper, garlic powder and blackened seasoning.  Then
shake it in a bag that has cornmeal, thyme and basil.  Bake on foil
sprayed with Pam about 20 minutes at 400 degrees and then 5 minutes at
350.  The outside is crisp but fish is still moist.

I use rosemary, thyme, lemon juice and Molly McButter.  Put it on the
fish and wrap in foil.  Bake or grill till done, about 10 minutes on
each side.  Family loves it that way.
