easy potatoes

I used a microwave pan for this that is designed to cook meat in is about 8
by 8 or 9 by 9 with a lid.
16 ounces red potatoes, washed, cut into bite sized or a bit larger chunks,
I left skins on.
1 med onion, diced small
4 ounces ff shredded cheese, I used cheddar
4 tsp olive oil

put the potatoes in the pan and toss with the olive oil, then sprinkle on
the onions then put on lid and microwave for 15 minutes on high, let stand
for 4/5 minutes, stir, put cheese on top and add salt and pepper if you
want, microwave with lid on until cheese is melted, stir serve.

this is a core food, each 1/4 of it counts for 1 tsp olive oil, I ate half
for my lunch and will have with dinner tomorrow night,

you are welcome, I adapted from my mom's grill recipe, she makes something
similar and wraps it in foil and it sits on the back of the grill and cooks
while my dad BBQs, Lee

I have done potatoes on the grill too, but a bit differently.  What I've
done is
scrubbed whole baking potatoes, cut slices across, so nearly through, but
not
all the way through, so they are like sliced rounds, but are still connected
at
the bottom of the potato.  Spread the sections apart just a bit, so as not
to
break them apart and sprinkle with powdered onion soup mix, wrap each potato
in foil and put on the grill/barbeque until done.  Pretty simple, but very
tasty and
low points/no fat.

Now, I might make those for dinner tomorrow, but in the oven instead.

I haven't done them in the oven before, usually just do them on the
barbeque, but I would suspect that 1 hour at about 350°F would be fine.

If it was a bit warmer here I'd use my barbeque, but I don't feel much like
getting cold!

Brenda, I live in central CA so we barbecue year round rain or shine. I
usually do roasted red potatoes in the oven.  I cut them in fourths and
sprinkle with salt and pepper.  Then I toss with a bit of olive oil and
fresh rosemary and bake at 400 for 40 minutes.  The outside gets crisp
but the inside is soft and they are delicious.  At the same time but for
just ten minutes I roast fresh green beans or asparagus.  I use non
stick foil or spray foil for both.  With the asparagus you can put a bit
of balsamic vinegar on top after it is done.  Both of these make a nice
"gourmet" accompaniment to whatever grilled protein you are having for
dinner.  Even if company is invited, no one thinks of it as a WW meal.
I serve this with a nice fresh salad too.
