Last night's bulgar pilaf from the stir it up cookbook was so tasty.  I
served it with catfish filets I bake and sauteed Swiss chard.  The scale
shows a small loss.  I am thrilled.

catfish...from Rosie Daly's, former Oprah chef, cookbook.  Heat oven to
400.  Rinse and dry the fish filets. Pour cornmeal in a bowl or bag and
add basil and thyme.  Season the fish filets with Cajun seasoning spice,
lemon pepper and garlic powder.  Shake or cover with the cornmeal
mixture.  Bake on non-stick or pam sprayed foil about 20 minutes.  the
filets are crispy on the outside but soft on the inside.

Tonight I am roasting chicken stuffed with garlic and herbs, asparagus
that is roasted at the same temp but just for 10 minutes and heating a
bag of butternut squash from Trader Joe's.

It has been raining steadily since yesterday so I am into comfort food.
