It's been a bad week or two, culminating in a horrendous day yesterday...
I've had hormonally induced Mad Munchies, hormonally induced depression,
and a bad few days with the fibro (more depression, plus pain). I think
I ate 25 points yesterday, and while I swam on Friday, it was only the
exercise points that kept me the right side of OUCH! So here I am,
trying to get back on track, and still having the munchies despite being
up to HERE with the painkillers! Grr!
I really could tear into a loaf of bread right now, but I'm trying not
to... So I hit the fridge rather than the bread bin, and have put
together a really simple soup:
2 pints vegetable stock
2 onions
1 large courgette (zuchini)
4 stalks of celery
Chop the veg into large chunks and simmer in the stock for 10-12
minutes. Purée with a hand held blender. Eat. Yumm... Dead simple,
thick and satisfying, a bowlful is zero points and two vegetable
portions. I can go to be feeling better, having clawed back 2 points
from yesterday's six over.
With all this munching I have no idea how I managed to lose another half
pound this week! Ho hum - I shall just take that and run!

Good idea about making soup.. there's something about soup that is very
soothing...

Thanks, I need it! Mind you, much of the pain and depression have
lifted today, so things are looking up already... I blame the soup! ;)

another really nice recipe too Kate is this one......not sure if you eat
pumpkins over in the uk or not, but in Australia we eat them as a
vegetable............
pumpkin soup
2 cups cooked pumpkin mashed
1 chopped onion
2 cups skim milk
2 cups water
2 chicken stock cubes
Spray large saucepan with oil and fry onion until soft. Add pumpkin
water, milk and stock cubes. Bring to the boil for 10 minutes.
Blend in blender for a smooth thick soup
serves 4

It's not 0 points but close to it. You have to count points for the skim
milk, 2 per cup.

Yes, but STOPPING the Mad Munchies is not easy... It's not simply a
matter of not eating when you feel a gnawing, raverning HUNGER clawing
at you both emotionally and physically. Mostly it's a matter of
recognising the cause and limiting the damage. Zero point soup is my
saviour in these situations. Allows me to eat without adding to the
points value of the day.
I did fajitas for dinner tonight as we had guests. Not sure how to
count it. I shall have to look up the tortillas and the refried
beans... Most of the rest was low fat, low cal, zero point, and I did
chicken breasts. Not sure I managed a whole chicken breast, but I sure
did eat plenty! ;)
