Uncle Bonzi - 17 Oct 2006 14:20 GMT My wife had one from years ago and after a move or two it is MIA. As I recall it was one point. Does any body have a Pumpkin Muffin Recipe?

lightening up recipes are pretty consistent when you read enough of them.
1. use pumpkin instead of zucchini. 2. replace half or 3/4 of what the recipe calls for in flour with whole wheat flour, you keep 1/4 of white flour for the texture and use the rest whole wheat for the fiber. 3. any bread, well quick bread or cake recipe can have the oil replaced with applesauce and it works just fine. 4. using egg beaters instead of whole eggs cuts several points as well.
and the tip from my leader is get the recipe for pumpkin pie and use all ff or fat reduced items and no crust.

Mix 1 small can of pumpkin with 1 box of dry cake mix.
Bake.
It makes 24 smaller muffins, and they are 1 point each. :)
