Tomorrow's picnic in SF

We're spending the day in San Francisco tomorrow, since money is an issue
right now we wanted to eat out only for 1 meal. So we decided to make lunch
a picnic (most probably at Suthro Haights, I love that place!!) and I made
some stuff I had tried last week, and some new stuff..

Here's what I've done:

I poached 2 small chicken breast in enought broth to cover the chiken, 1 tsp
ground cumin (I roasted and ground it myself) and 1/2 tsp Smoked paprika and
oh... about.. 1/4 cup of fresh mint (maybe a bit less)

With that we'll have a Tabouleh that I had tried last week... Yummy!

Tabouli

Ingredients
1 cup uncooked bulgur
1 cup water (I used chicken broth, I rarely use water in cooking)
3 Tbsp extra virgin olive oil
1/3 cup lemon juice
1/2 tsp salt
1/4 tsp garlic powder or 1 clove garlic, minced
1/8 tsp cayenne pepper or 1/4 tsp black pepper (to taste)
1/4 c. fresh chopped mint
1/4 cup scallions (chopped)
1 bunch fresh parsley (chopped)
1 large , fresh tomato (chopped)

Directions
Pour boiling water over bulgur wheat in bowl and let sit for 1/2 hour.
In a jar mix oil, lemon juice, salt, garlic, pepper and shake well. Mix
wheat and vegetables, pour in oil mixture and stir well. Refrigerate several
hours before serving.
Serve over lettuce.

As a snack, or a side for lunch depending on how hungry we are, we'll have
fresh veggies with hummus. I found this hummus in a recipe file I found on
the WW boards. It's heavenly!! hum... not that I tasted it already or
anything.. hehehe I had canned roasted peppers on hand, but I bet it'd be
even better if you roasted them yourself! It's easy and sooooooo yummy !

Mediterranean Hummus

Ingredients
1 can 14 1/2 oz can garbanzo beans, drained and rinsed
1/4 cup Kalamata olives, pitted
1/4 cup roasted red peppers
2 tsp garlic, finely chopped
3 T lemon juice
1 tsp olive oil
salt and pepper to taste

Directions
Blend in a food processor, scraping sides occasionally. Serve with raw
veggies.

With that we're having diced melons with probably a bit of yogurt (not
core!!)

Other than my strawberry yogurt, everything is core!!!!!! I'm planning on
being good for dinner too, but we'll be walking all day so I'm not too
worried..
