What we had for dinner

Tonight I made the Trader Joe's chili lime chicken burgers that are 2
points each.  They are 1/4 pound each so I added a lot of side dishes.

sauteed tomatoes in garlic and vegetable broth with Swiss chard and a
few teaspoons of olive oil

eggplant gratin...steam the eggplant slices, sautee onion and
garlic...add to a bowl with minced cilantro and put in a rectangular
baking dish.  Top with a bit of fresh grated parmesan, cilantro and
panko bread crumbs with more cilantro, salt and pepper.  Bake at 400
degrees for 20 minutes.

fresh sliced heirloom tomatoes from the garden

small cup of cucumber avocado soup using a recipe I took from the
newspaper.

ice tea to drink

This chili chicken burgers are Core too!!

We had a chicken curry that I made up on the spot... with onions, tomatoes,
thighs, garlic, serrano pepper and lots of spices.

With that I made a split peas puree (Yellow sp)

And the Spicy barley pilaf (from the stir it up cookbook)

Yum... turned out really good and all core!

I roast my spices myself so it IS very flavorfull.

I spend a lot of time researching spice mixes, and recipes..

Hubby ain't complaining..
