pullet eggs

At some point I need to get out of bed instead of lying here emailing!
I made a one-serving recipe for ww pancakes using a pullet egg, which is
perfect for one-person stuff.  I am going to weigh one later and get the
exact, but I have been counting them as 1 point.  They're lovely to have
around for snacks.  I keep a little bowl of hard-boiled.  You can even
make yourself little bitty deviled eggs and still only have one point
ANyway, the recipe came out to 4 points.   I use King Arthur
flours...their whole-wheat is a delight to use and doesn't give you that
"HEAVY" taste.
I am looking through their cookbooks to try and scale down some of my
favourites.  When I get on maintenance, though, I am definitely going to
make room for their oat scones! (7 points)

I just weighed the little sucker....yep, 1 point. that was with the
shell.   When I boil some up I'll try on naked!
These are great little eggs and they are usually fresh and free-range
since nobody does them commercially.  I know a farmer that has more than
one can comfortably imagine of the things and sells them for $1 a dozen.
 If you can catch up with a source, definitely do so.  It means you can
have a fried egg with your breakfast for just one point.  They're also
the perfect size for the Pepperidge Farm thin-sliced if you want a
fried-egg sandwich. 2.5 points or 3 for the whole thing.   I have yet to
hit on how long to get them soft-boiled.  It's pretty much a "zap"
situation when it comes to heat.
I will shut up now on the subject!
