Up, up, and awaaaaay!

Kate XXXXXX - 14 Aug 2008 23:09 GMT OK, so my official goal weight is 10st 4lbs, and as of today my current official weight is 10st 12.5lbs. I am 8.5lbs up on my goal weight. Just over half a stone, so shedding it is certainly doable.
Illness and other distractions have meant I really have not swum for a month, and my fitness levels are down. Pain from the fibro has made walking difficult. I got depressed and ate too much... The food I cooked is great: WW recipes or ideals, proper portions, lean meats, low fat and tasty... But I've also been eating out a lot at lunchtime, filling up on bread, eating cake and slurping down latte by the gallon (skinny latte to be sure, but waaaaay too often!).
This week I shall get back to planning proper meals, filling up on vegetables and salads, snacking on apples and carrots, weoghing the breakfast cereals, cutting down on the fancy breads, and eating cake as an occasional treat.
I'll fire up the pedometer, WALK over to visit my friend a couple of miles away, and after this weekend, get back to the swimming (we have guests, and so does my usual swimming partner).
My goals for the coming week: PLAN all the meals Move More! DRINK more water/tea and fewer lattes! TAKE THE PILLS for the fibro... I get fed up and forget. Fibro is a boring pain.

I've recently re-joined WW after way too many years away (never reached goal), But I'm back to it again and will succeed this time! What's happened to this group? There are so many spammers, and trying to read around them is somewhat frustrating. Keep on keeping on, that's the only way we will succeed.

I think a lot of the regulars are away over the summer. But the trolls are certainly out in forcet present. Must be that school is out and the weather too wet for them to play outside...
We are almost an hour and a half into the new week, and I am working on those goals! Drinking fruit tea and taking the pills as I type... :) And the menu and shopping list for the week are done! :D

My plan for this week: - Continue my 21 days to create a new habit challenge: every morning for 21 days I get up at 5:15 to be at the gym at 5:30 and either swim or do the elliptical for a minimum of 30 minutes. - Plan better so that I always have healthy foods around and am not tempted to eat bad stuff when my husband is stuck in traffic taking forever to get home.. I'm HUNGRY!!! - Ease up on myself... took me 2 years to gain 10 lbs.. I will not lose them by tomorrow.. enough already!

My downfall too! Ended up having 'dinner' at 10pm on Wednesday as hubby got caught by a phone call when he wanted to set out at 4 pm, and sucked into another one at six! He didn't get away intil 7:30, and was two hours away, on the other side of London... I ate a sandwich to keep me going and then had dinner. Not good.
Still, the week is planned, and great foods are sorted for the weekend of guests:
Tonight's dinner: Chicken breasts, baked with herbs and garlic New potatoes Medeterranian roasted vegetables (onion, peppers, fennel, mushrooms, tomatoes, courgettes, with a spray of olive oil)
We have strawberries and half fat creme fraiche for desert.
Saturday dinner: BBQ: low fat sausages, venison burgers, lean lamb chops Green salad, tomatoes, cucumber, and grated carrots New potato salad
We'll follow that with fresh fruit
Sunday lunch: Poached salmon (I have a large fillet in the freezer that could do with being eaten!) New potato salad Green salad, tomatoes, cucumber, and grated carrots Fruit salad and half fat creme fraiche.
We'll have a lighter meal in the evening after the guests have departed, rather than another dinner.
There's so much salad stuff about at this time of year that I can creat different styles of green salad every day for a week if I want to! :D

Jamaican-Style Potato Salad
6 servings, 2 pts/serving (Core)
Ingredients 11/2 pounds new potatoes, halved if large
1 tsp canola oil
2 celery stalk finely chopped
1 small onion finely sliced (didn't have any this time, I put garlic powder)
1/2 green bell pepper, seeded and finely chopped
1/2 red bell pepper, seeded and finely chopped
1/2 cup reduced sodium chicken broth
1/4 cup apple cider vinegar
2 tsp dijon mustard (I use whole grain, looks more "fuffy")
1/2 tsp sugar free jerk seasoning
1/2 tsp salt
Directions Bring a large pot of water to a boil; add the potatoes and return to a boil. Reduce the heat and simmer until the potatoes are fork-tender, 15-20 minutes. Drain in a colander; set aside.
Meanwhile, to make the dressing, heat the oil in a large nonstick skillet over medium-low heat. Add the celery, onion and bell peppers; cook, stirring, until softened, 6-8 minutes. Stir in the remaining ingredients and cook, stirring, until heated through, about 3 minutes. Remove the skillet from the heat.
When the potatoes are cool enough to handle, cut into 3/4 inch chunks; transfer to a serving bowl. Pour the dressing over the potatoes and toss gently to coat. Serve within 4 hours or refrigerate, covered, up to 2 days. For the best flavor, serve at room temperature.
Suggested variation: You can substitute 2 cups of drained canned hearts of palm for half of the potatoes.

I don't like mayo.. you think I could put 3 TBSP of yogurt, add 1 tsp of olive oil and skip the mayo?

If you use extra virgin oil, a couple of teaspoons would be enough.
