I didn't want oats, so I looked in the fridge;
1/2 cup cooked couscous
5-6 leaves spinach julienned
1/3 cup (or so... I didn't measure) red bell pepper julienned
1 egg
Throw the couscous in a bowl, add spinach and pepper on top.
My idea was to make the egg over-easy, but the yolk burst on landing in the
pan, so scrambled it just lightly so that white and yolk are folded
together, but not mixed, but everything is cooked. add salt and pepper to
taste.
Put egg over everything else, enjoy! It was delicious!

Really? I use whole wheat couscous. Not the regular kind.
I love it cause it's so quick and easy! And it goes with everything...

i must be doing something wrong because there is very little in the way of a
grain i don't like may try it again after we get some of the food in this
house eaten... there has been great food sales lately and my freezer, frig
and cabinets are full.
