Nifty Gift

Nothing beats the gift I just gave myself!

I lost four pounds this week, made my own versions of Moussaka,
Cheesecake with Hot Blueberry Sauce,
Zucchini Pasta with Meat Sauce, Strawberry Sherbet with Walnuts, and
Honey Garlic Chicken Drumsticks with Shitake Mushrooms.

My daily calorie totals were 1200 evenly divided between protein, carbs
and fat. I had 1.5 liters of water every day. I have a compressed disc
and resulting Sciatica so could not exercise this week.

My goal is to lose another two pounds by the New Year.

Diva,
You go girl! This is a great reminder that it's possible
to lose weight while eating delicious, healthy meals.We're
going to enjoy this recipe from the Weight Watchers New
Complete cookbook while cheering the WI Badgers to victory
on New Year's day.
Hummus
Combine a 15 oz can garbanzo beans (rinsed and drained),
1/2 cup plain fat-free yogurt, 2 T lemon juice, 3 crushed
garlic cloves, 2 t olive oil, 1 T water, salt, ground
cumin and pepper to taste and puree in a food processor.
Surround with the freshest, most beautiful vegetables you
can find. We will use broccoli, green beans (parboiled),
carrots and red and yellow pepper strips.

Isn't Hummus supposed to have some sesame in it?  Tahini for example?

Oh, you are so right, and I love tahini and the flavor it
adds to hummus. This is a lighter version of hummus,
though, (from Weight Watchers) and doesn't use tahini.
It's really quite good though, even without the tahini.
Although tahini (sesame seed paste) is a good source of
essential fatty acids, it's fairly  high in calories. But
by all means, feel free to add tahini. Maybe we should
call my recipe "Mock Hummus" :)

You might try adding a little asian sesame oil.  Even a teaspoon (not
very many calories) would kick up the flavor.  I love sesame oil.

That's a good idea, Del. I often add a sprinkle of sesame
oil to finished stir frys, and it does add a lot of
flavor. Thanks for the tip.
