It would not gel - tried it. I've added a Tbsp of pudding mix to soy milk in
a smoothie for flavor and that's about all you can get with the combo.

I have made pudding with soy milk - Jello brand sugar free chocolate. It
was the kind you have to cook, not instant. The box even said not to use
soy milk but I tried it anyway and it DID work. I don't remember what brand
of soy milk I used but whatever it was, it was the lowest calorie version I
could find. I used to buy Silk all the time but now I usually get 8th
Continent. Even though I like soy milk I did not care for the flavor of the
pudding using it. Not sure if it was the cooking that did it, but the taste
wasn't very appealing.

The Silk website says to add cornstarch -- but adding 1/4 cup cornstarch
would be about 120 calories so would more than offset the 20 fewer
calories the 8th Continent has than nonfat cow's milk.
