Thought I'd post a second time, even as a newcomer to this group. <s> I've
been hoping to find some recipes for toasted or roasted nuts using just
herbs, spices and perhaps either cooking spray or good fats. A Google search
(I admit, it wasn't exhaustive) didn't bring any results. I love all types
of nuts and know that snacking on almonds, especially, is a healthy thing to
do. But raw almonds get boring after awhile.

(I'll include some stats after weighing myself at work tonight; the medical
scale is accurate and I work every Friday night, so it seemed like a good

Spray nuts with some oil. Microwave on high for 2 minutes. Stir and
microwave another 2 minutes being careful not to burn them. Dredge them
in a mixture of cloves, cinnamonand allspice loor for savory ones,
garlic powder and herbs.

Here's the lazy way (my way) - use natural peanut butter and almond
butter. I've found they go well with 1) yogurt 2) oatmeal. My first
two meals : 1 cup lite yogurt, 1/2 pound blueberries, 1 tablespoon
peanut butter - to drink, 8 oz grapefruit juice. 400 calories. My
final meal of the day (meal 6) - 1/2 cup oatmeal (before cooking - 1
1/2 cups cooked) plus 3 tablespoons of almond butter + artifical
sweetener + cinnamon. Nuts are very healthy - but, of course, also
high in calories. Second lazy way - measure an ounce of nuts - eat an
ounce of whole grain crispbreads (or shreded wheat)with them. Hard
way: check out Thai cooking or Indian cooking.
