Pilates and Peanut Butter Pancakes

If I skip exercises, blame it on the lowly peanut.

One of my favorite breakfasts is a peanut butter pancake, (One egg and
one tablespoon peanut butter plus a pinch of baking soda).

Since PB is calorie dense, I don't keep it on hand all the time but
when I do a big conflict always arises.

Exercise is before breakfast. But there have been times when I wanted
that PB pancake so badly that I put off the Pilates until later, which
never came.

This morning, exercise and a hot shower made me feel I now deserve that
fresh squeezed organic orange juice, fluffy PB Pancake and tall Allegra
freshly ground coffee (the Whole Foods House brand)with a dash of
vanilla and cinnamon. Besides, I'm stalling. Today is election day in
Canada and many of us will be undecided until the polling places open
at 9:30 a.m.

I'm voting for whoever supports the peanut farmers!

Wow .. this sounds good!  Do you cook the same as a pancake?
And I wonder if it would work w/ other nut butters?

Same as other pancakes and using any nut butter. i have made it in a
pan with melted one pat of butter and without butter in a non stick pan
too. It's excellent for those who are garin free or low carb

In a narrow container, combine 1 egg, one heaping tablespoon of nut
butter, a squirt of honey and 1/4 tsp. baking SODA.

Heat small skillet and add i pat butter 9or do in a non stick skillet
fat freee)

Cook until browned on one side, turn and finish. Not butters and nut
flours brown quickly.

I top it with honey or hot cooked berries sweetened with honey or
saccharin.

Carol, I'm a bit confused as I don't see any flour in this.  Is it
more like an omelette rather than a pancake?

It will be a pancake as niut butter is the same as nut flour. It just
becaomes thick and more liquid when processed longer. Try the recipe
and you will see.

Jimmy Carter will appreciate your vote<g>

Your peanut butter pancake sounds good.  I seldom bring peanut butter in the
house as I have a problem leaving it alone until it's all gone.

Do you have the Pilates tapes?  I have some but have never used them :(
They hold some Pilates sessions at the gym but they don't currently fit into
my schedule.  I've heard several people say they think it increases their
flexibility.  Have you found this true?

I have no tapes. An annual visit from Mistress Krista established my
routine.

I know you asked Carol, but I love Pilates!  I always feel so relaxed and
limber when I'm done and I'm sure it helped my back get stronger.  I have
the Winsor tapes.

Those are the tapes I have.  I'm going to have to make time for them.

Too bad you don't live closer.  I have a garage full of bikes and need to
get rid of a few - but I'm having a hard time parting with any of them<g>
Maybe I'll just build an addition of the shed in the backyard.

That sounds delicious Carol.  How about posting the recipe in full.  I
know how to make ordinary pancakes, but perhaps this recipe is
different?

I think perhaps, though, that the thread should be called "Pilates OR
peanut butter pancakes":)

After a long night of watching the polls (most of which I did at the gym
:)), I decided I needed to try this. WOW!  Absolutely delicious!  Thank you
for posting this... I had one pancake with some cooked blueberry topping and
I feel full!  This will definitely become a breakfast favourite for me.

Carol:

Haven't seen you for a while.  Peanut butter is one of my favorite foods.
Could you go into a little more detail about how one goes about making your
peanut butter pancake?  Sounds like a South Beach treasure.

It is actually something for my Specific Carbohydrate Diet used for
Celiac Disease.

Use an electric hand blender or just stir the ingredients or use an
electric egg beater. I sometimes add a dash of vanilla and cinnamon to
the egg, peanut buter and poinch of baking soda.

Use a non stick pan or a heated skillet with a pat of butter added.
Pour in the batter, brown on one side, turn over and brown the other
side. It's so simple. I pour honey on it.

This may sound calorie dense and low carbers will not like the use of
honey but I am currently on maintenance and because I do not use
disaccharide carbohydrayes need some source of carbs to avoid ketosis.

carol?
how about just saying, "i use HONEY because i like it, and i have
worked it into my daily woe"?

do you eat fruits and veggies?
have you had problems with ketosis?

Rosie, So glad you commented and gave me an opportunity to sound off on
my favorite cause.

One of the misconceptions about the Specific Carbohydrate Diet is that
it is related to low carb when it actually singles out acceptable
monosaccharide carbs that can be directly absorbed into the bloodstream
without taxing a damaged digestive system.

Children in particular who are following the diet for autism are very
picky eaters. Nearly 50% have digestive malabsorption and there is a
concern that because they are restricted from using disaccharide
carbohydrates such as those found in grains and many root vegetables
like potatoes, parsnips, yams and Jerusalem artichokes they may receive
too much protein and produce ketones. This may be desireable in Atkins
but not for these children.

The two acceptable sweeteners are honey ( which has been predigested by
the bees )  and saccharine, a chemical which now has a clean bill of
health. I would certainly opt for the honey on a pancake or cheese
crepe as saccharin disolved in hot water would lack texture.

So this is why I eat honey, and yes--I also like it.  As you may
remember, I like many foods. I do eat fruits ans vegetables but should
add even more.

Over 80% of the children on our Yahoo group that supports The Specific
Carbohydrate Diet for autism have improved or recovered on SCD. This
includes a majority who transitioned from the Gluten Free Casein Diet
when they reached a plateau in their progress.

Not all diet is about weight loss. The children that don't get the
nutrients from the food are mainly underweight and often starving and
demanding large quantities of food during the initial detoxification
period.

In adults with gastric illness and gut inflammation, the diet usually
stabilizes a normal weight once an obese person has lost the weight.

For more about this diet as applied to autism, gastric diseases AHD and
ADD see:
