Breakfast bread

My mother shared a wonderful recipe with me that she calls "breakfast bread"
(she, and my father, often eats it with fruit for breakfast.  My father is
diabetic, so they make it with splenda).  My family has been loving it in
the morning with a slice of musk melon, and some watermellon.  Thought I
would share it, as it is just delicious.  If anyone else has good recipe
ideas like this, please share!

2 1/2 C. flour
1 1/2 t sp. ginger
1 1/2  cinnamon
1/2 tsp.nutmeg
1 tsp. B. soda
1/2 tsp. salt

2 eggs  ( I use 3 whites)

2 cups sugar ( or splenda)

1/2 C apple sauce

1 C pumpkin

1 C whole  cranberry sauce

1/2 C chopped nuts

combine dry ingrediants and set aside.

mix  sugar ,eggs, apple sauce ,pumpkin & cranberry sauce mix with dry
ingred. just till moist. spoon into greased pan or two loaf sized.
bake  350'  for 50-60 mins. or until knife comes ot clean.  cool 5-10
min.   & remove from pans.

keep in fridge after first two days!!

How can anybody eat anything so sweet for breakfast?  Ick.  Sweet things in
the morning nauseate me.

Then I would suggest you just ignore this posting, or maybe try it later in
the day?  Thanks for your feedback, however.

Why make such a rude and unnecessary comment?  No one is forcing you

Hehehehehe, I think this is why our family is so pleased with this bread!
Hard to believe something like this can be so-o-o-o good and not so bad for
you!

It does sound good.  If I could manage to put more than two
ingredients together without disaster, I would actually try
it.

I would be one of those people!  Savory breakfast food does nothing for me.  
I've been able to give up donuts and pastries but I love my hot cereals to
taste at least a little sweet.

I have a recipe for grain free bread which uses almond flour and Dry
Pressed Cottage Cheese. It is good for low caeb and those with gkuten
and grain intolerance.

Oh, and this is best made with whole wheat flour.
