I am going to announce a tomato challenge, whoever eats most tomatoes, wins. We already have a few insane chalenges going on here (like water challenge), why not issue mine.

I planted a "salad" garden this year: all stuff I go out and pick for a salad. I've harvested several heads of lettuce and spinach and the snow peas... but no tomatoes. I suspect the tomatoes will all come at the exact same moment, though I purposely planted four different sorts.

Exactly my situation, also. 11 tomato plants, enormous sized, lots of green tomatoes on them, very slow to ripen.

Title: Fried Green Tomatoes Categories: Native amer, Vegetables Yield: 6 servings
2 lb Green tomatoes 4 ea Eggs 1 1/4 c Corn meal 3/4 c Water 1/4 c Minced chives 1 tb Salt 1/4 ts Pepper, fresh ground 1/4 c Butter or margarine
Slice the tomatoes 1/2 inch thick, but do not peel or core. Drain well between several thicknesses of paper toweling until most of the moisture of the tomatoes is absorbed. While the tomatoes are draining, make a batter by beating the eggs until light, then mixing in the corn meal, water, minced chives, salt and pepper. In a large, heavy iron skillet, heat the butter or margarine until bubbly. Dip the tomato slices into batter, and brown quickly on both sides. Serve at once.

We used to call green tomato relish picalilli
Title: Green Tomato Relish Categories: Relishes, Vegetables, Preserve Yield: 6 servings
6 ea Red Sweet Peppers * 3 1/2 c Sugar 2 lb Green Tomatoes * 2 c Cider Vinegar 2 lb Onions * 1 c Water 1 ea Small Head Cabbage * 1 tb Mustard Seed 3 ea Sweet Green Peppers * 1 tb Ground Turmeric 1/4 c Pickling Salt 2 ts Celery Seed
* All vegetables are to be coarsely ground.
~------------------------------------------------------------------------- Mix vegetables and salt. Cover and let stand 12 to 18 hours. Drain vegetables and rinse. Mix vegetables and remaining ingredients. Heat to boiling; reduce heat. Simmer, uncovered, 3 minutes. Pack simmering mixture in hot jars, leaving 1/8" headspace; seal. Process 10 minutes in a boiling water bath. Makes 5 - 6 pints. NOTE: ~---- Vegetables can be chopped if you prefer.

A reasonable, less-effort approximation can be achieved by salting the tomatoes a bit and letting them sweat for 5 minutes, dipping in corn meal, then baking in the oven (flip once) until they're browned. I'm not sure what temperature I used to use, I haven't had an oversupply of green tomatoes for a few years.

I've never canned as an adult, but I certainly recall doing it as a child. Jams and pickles, too.

Actually, from the very beginning hydration was one of my goals. When I first started this WOL -- over a year ago -- I wrote down three goals and one of they was "stay hydrated" because I knew at the time that was an issue for me. I think that I've done well with it. Bringing my 1 liter water bottle to work with me each day certainly helps!

That's what I took issue with, the use of the word "insane". Apparently everything he doesn't understand or agree with is "insane" or "idiotic."

I am now in the healthy range of 55.9%. I didn't realize that I wasn't hydrating myself enough.
