Low carb and Job Loss

Guess they think that making "low carb" cookies was an option.  Hmmmm,
sad.  I rather would like to see lower carb cookies.

A few yrs ago, when the Atkins 'Diet Revolution' book was all the rage I
tried some low carb subs for high carb stuff like flour tortillas, pancake
mix, muffin & bread mixes & the infamous Atkins Bars. The taste was awful &
even the texture didn't resemble that of the original product at all.

When you read the label, these things still have quite a large 'total carb'
count but only a small 'effective carb' count. I never managed to fully
understand the difference between carbs that count & carbs that don't count
(like sugar alcohols, so widely used).  Instructions required the use of
large amounts of fat to prepare, thus increasing the calorie count. I don't
know if these things are any good for diabetics or people with medical
conditions that force them to restrict carbs but I don't think much of them
as 'diet' products for slimmers.

The popularity of low carb is going down fast.  I work at a store and
recently had to send back a lot of low carb candy because they were
approaching expiration and were just not selling.

I'm a "smart carber' and use those without refined sugar or starch that
is hard to digest for people with gut diseases.

My carbs are found in nuts, honey, fruit and vegetables. I do not use
rice, potatoes, soy, grain or refined sugar.  I believe if I did not
have Celiac Disease I would still choose to eat the same way after five
years on the Specific Carbohydrate Diet.
