Salad days

I now have seven salad days a week and that is my lunch. It affords  a
quick way to get protein, fiber, fruit and calcium in one bowl. I make
all my own dressings. To account for the fat that the dresssings are
full fat, I now use sprayed oil for making crepes and stir fries and
cut the amount of butter on hot vegtables in half.

Some of my combos:
Mixed field greens or watercress 1/2 pear, bleu cheese,  walnuts, honey
and ginger added to home made mayo

Spinach, tangelo orange sections, almonds, cheddar, red onion and
raisins with  a garlic vinagrette dressing

Roasted eggplant red pepper, mushrooms, olives and greens with olive oil

Chicken pieces, raisins, pineapple, cheddar cheese greens and homemade
curry dressing

Shrimp, hard boiled egg, red onion, real bacon pieces. greens with
homemade caeser dressing

Cantelope, honeydew and watermelon cubes, strawberries, grapes, red
onion, cold cooked peas, romaine and a Thai Caesar dressing (that one I
buy at Whole Foods)

Cubes of cold roast beef, green onions, mushrooms, capers, toasted
almonds, salad greens, cherry tomatoes in a honey mustard or tomato
based Russian Dressing

Sounds like a GREAT idea! I eat salads frequently... but the idea of "a
day." or two days is appealing... and makes for variety!Thanks for the
suggestion!

The dressings are calrie dense and I use about one tablespoonful.

Homemade mayo:
1 egg
1/4 tsp. dry mustard
1-1 1/4 cups pure good sunflower oil
1 tablespoon lemon juice
salt

Combine salt, juice, egg, mustard in a narrow container. Add 1/4 cup of
the oil and mix with a hand blendor then drizzle in remaining oil while
blender is going. It should all be added within 60 seconds. Mayo will
thicken as you do this. Store in refrigerator in tight sterile glass
jar 7-10 days and only serve with a clean utensil.

Bleu Cheese Caesar Dressing:
Mash a clove of garlic in a small dish. Add an ounce of fresh Bleu
Cheese, one taablespoon of homemade mayo, a drop or two of honey, a
teaspoon of olive oil, 1/2 teaspoon Dijon mustard and a few drops of
lemon juice and mash well with a small fork until blended.

Honey Mustard Dressing:
To one tablespoon mayo, add 1/2 teaspoon honey, a little olive oil and
1/4 teaspoon wet Dijon mustard
a drop or two of honey and a crushed clove of garlic are optional

Russian dressing:
To one tablespoon mayo , add a little homemade ketchup, a few drops
Tobasco (which is simmered down tomato juice), a slice of finely minced
pickle, honey to taste and thin with a little water if needed.

remember these are not intended as low calorie or low fat recipes. Pare
off fat calories from other foods asd these dressings will make large
salds appetizing and make them an entire midday meal.

They all sound wonderful Carol!  I've been putting half a pear on my
salads and really love it.

Would you post the recipe for the curry dressing, please?

I can not use commercial cirry powder so simply add powdered mustard,
garlic powder (also homemade), a few drops of Tobasco  and cinnamon to
things for a curried flavor. You can use the store boiught curry
powder.
Add this to mayo and I thin it with a litle olive oil so he greens can
be tossed.

It sounds like I have to fuss a lot to cook but everything I make is
fairly simple and quick abd really tastes good.

IKWYM, when I tell people what was in my breakfast on an average morning
they think it's some big production.  I barely have to move around the
kitchen because everything is handy by.  I can literally throw it
together.
(and nobody has more sets of measuring cups than I do<g>)

These all sound yummy, but some of them have virtually no protein
(like the one with a bunch of fruit and Thai Caesar dressing).  To me,
this means they aren't a meal by themselves, but they might be good as
part of a meal, or maybe protein could be added.  I'll save this for
ideas.

Sorry I omitted optional swiss cheese with the fruit. I always add at
least anounce of cheese for some protein. Since i have an egg and dry
pressed cottage cheese every morning and generous portion of meat fish
or poultry at dinner I get sufficient protein, about 80-95 grams a day.

That's certainly enough protein for the day.  I just like a fair
amount with my lunch, since I normally do weight training in the
afternoon, so I'd want to add more to a lunchtime salad.  I like to
get at least 1/3 of my day's protein at lunch.  Cheese isn't really a
great protein source -- though I love it :-).   An ounce of cheese has
only 5-7 grams of protein.  Most of its calories come from fat.
