I'm stuck with about 10 lbs of traditionally roasted Turkey meat (10 out
of a 27 lb bird) So any Turkey ideas/recipes welcome here!!

Wow, we cooked a 12 lbs bird and I thought it was big!

What you can do with excess meat is, grind it in a meat grinder and
freeze in a ziploc bag. When you unfreeze, you can make pies with it.
Or you can make potato pancakes and add ground turkey meat to them.
Just refrying it with onions and garlic is delicious.

BF threw out the stock before I had a chance to make soup...  But I'd do up
a huge batch of soup and can/freeze it in smaller servings.

Freeze some meat for later.  (unless you are doing Christmas too.)

turkey sandwiches
turkey salad
turkey soup

I'm looking forward to "low carbing" it for a few days...  although I can't
until the pie and stuffing are gone.  :)

It is very yummy. A tried and true recipe for recycling poultry meat
that is about to go bad.
