Hello all,

My father, a diabetic, is having quintuple bypass surgery today.  I
will be staying with him the first week of April, after he is released
from the hospital, to help take care of him.  One of the things I want
to do while I'm there is prepare some meals for him that he can freeze
and heat up  in individual portions.  My step-mother doesn't cook much,
so this would be a big help for both of them.

If you have any diabetic, heart-smart recipes that would freeze well
(and are relatively easy - I also have a 7 month old baby to wrangle!)
please post them.  He doesn't like squash, carrots, mushrooms, or
onions.

Actually, I did that for about a year, and it was wonderful.  We didn't
love some of the recipes, but you can't please everyone, every time.

I plan to go through those recipes as I'm making my lists...

I can't imagine how I'm going to cook low fat, low salt, low
cholesterol, low sugar, and low carb.  I just can not wrap my head
around that list...

How about fish, poultry, soy products, veggies, etc.

I wrap individual servings of frozen fish fillets and vegetables seasoned
with Mrs. Dash and wrap in aluminum foil.  You can take one out of the
freezer, thaw in refrigerator and cook for a quick dinner.

Cook some chicken breast on a George Foreman and top with peach salsa for
another quick and easy dinner.

I hope the surgery went well and your Dad has a speedy recovery.
