If a man is 5 11 what should his caloric intake be?
Is there a calorie calculator online that is worth using?

It depends on how much he weighs and what his goals are.

    Start with 2500 and adjust as needed.

    There are a number of them.  They are
    often called BMR calculators.

start with 10 calories x current bodyweight.

There are many guidelines to be found.  They seem to range
from 12 cal x current pounds (which seems to assume that
fat consumes the same calories as lean) through 8 cal x
goal pounds (which seems to assume that fat consumes no
calories).  I rather like the idea of averaging those two numbers.
